Do you have vcenter update manager? It is free for vcenter and fairly point-and-click.

Yes, we do have vcentre update manager, question also is - is it a straight forward upgrade path? from 5.1.0 Express Patch 2 to 5.1 Update 2?
I have about 10 hosts in a cluster, would it be advisable to do this during production hours or after hours?

Insert ESXi version here:
http://partnerweb.vmware.com/comp_guide2/sim/interop_matrix.php
Then add update manager and vcenter, and check if you need to upgrade them alongside
vcenter upgrade instructions has instructions on which parts to patch first, but usually patches dont break things.

I checked my current build level - here is what I see in vsphere client
Vmware vCentre Server - version 5.1.0 build 947673
is there a guide or document that shows me step by step how to perform the update to 5.1.2?
is there any patch in between I need to do or go straight to 5.1.2?

I actually just found the exact build as I was off in my original post
here is the patch path I found on.  So it looks like I have 4 other patches to do, can i go straight to 5.1 update 2 2014-01-16?
or do 1 at a time?

You just need update 1 and update 2
patches are to address problems that you are encountering (except few critical ones)

Conect vcenter update manager to the internet, attach profile "all critical patches" and "all non-critical patches" in "hosts and clusters" view...
scan
stage
remediate
...

According to vmware HCL - 5.1 is compatible with windows 2012 without patching.

If I were to open a support ticket with vmware support, would they help with this process?

About using vmware update manager?
Hereis the documentation

Calling support on applying simple upgrade ...with upgrade manager is as humorous as requiring bill gates to install your windows 7 update
