How to assign which application opens

Hi, under Windows XP, i use to go to Folder Options and choose File Type to assign which application to use to open a certain extension.  How do you do that in Windows 7?

type "default programs" under start menu--> run
if you know how it works with XP you w ill manage from there..
in addition - don't you have the "open with" option when you right click a file?
