Outbound Mail tracking for one email address Exchange 2010

Hi,

Is it possible to set exchange 2010 to log all outbound email for a single email address?

We are having issues with one email address which seems to be spamming and I want to track its activity in exchange if possible.

Tracking the activity of a single email address may not help you at all.  

What is causing you to believe that the address is being used to send SPAM?
