Outlook 365 signatures overwrite text

I have created a moderately complex HTML signature in Outlook 365, with links and a graphic logo. Sometimes when I insert it into an email it overwrites some of what I have typed.

I can reproduce the problem this way: Create a new email, Select All, Delete (to get rid of the signature that is inserted automatically), type some text, then insert the signature from the ribbon. The signature appears, but what I have typed disappears!

Anyone have a clue?

Instead of deleting the default signature can you right click on it? You should get a list of signatures to choose from and if you select the html one it will replace the default. Someone else had a similar issue and determined that it was default behaviour:
