Issue with Exch 2007 Information store

The server has the latest SP3 and the latest roll updates but each day at least once a day, the exchange server becomes unresponsive and we have to restart the Infromation Store service. Once that is done, users can get to their email again...
Any ideas on what this could be or what I need to look at?

Please provide this info to better evaluate your situation:

1. What drive is Exchange installed into?
2. How much free disk space is on each drive
3. How much ram is in the system
4. is this Virtual or Physical?
5. What version of server are you running?
6. What Anti Virus is installed?
7. Have you added an exception to the Anti Virus to not scan the Exchange folder structure?

The issue was with the public folder dbs. I had to run many repairs on it with eseutil and isinteg to get the issue resolved..
