Shut down the guest VMs (from their own operating system)
Put the ESXi host in maintenance mode (right click in VSphere and select Enter Maintenance Mode)
Shut down the ESXi host (right click and select Shut down).
Shut down the SAN.

To bring up.
Completely power on the SAN. Verify it is fully booted.
Power on the ESXi host
Exit maintenance mode on ESXi (right click and exit maintenance mode)
Power on the guest VMs.

If you have multiple ESXi hosts and you only need to shut down a single host for repair you can Vmotion your VMs between hosts.

The shut down sequence for SANs varies based on the SAN but a typical HP MSA P2000 will have two controllers. You go into the web interface and tell it to shut down both controllers.
