Best  Way to Upgrade VMFS 3.58 to VMFS 5 in Esxi 5.1

Recently I have upgrade my Environment form 4.1 to 5.1...

Please advice..best way to upgrade VMFS 3.58(came form 4.1) to VMFS 5(5.1)..

Can We Upgrade VMFS 3 to 5 and then Increase Data Store Size form 2TB..to get all features ..which we get with newly created VMFS 5 Data Store ?
Can we Simply upgrade existing VMF3 to 5 with existing size <2 TB.. ?
Or If we have to Create newly Fresh Data store?

Do we have limitation for  LUN/Data Store/VMDK size in 5.1. ? as earlier it was allowing Max 2 TB LUN.

Will there be any Risk /down time required by going any of the ways ?

Actually here we are having issue due to less number of lun id free, as earlier we had Data store/Lun size max 2 TB ,So Can we increase Lun Size now ?
Will there be any dependency with SAN/Hardware  ?

The best way is to Delete the LUN, and re-create a new LUN using VMFS 5.

Thanks hanccocka,Please confirm if we can get same functionality by upgrading to vmfs 5 and then increase form 2 TB..to get all features of vmfs 5 ?
