I have found several articels that show how to do this on other OKI printers but they simply don't work on the C321DN model.

Power up while holding OK button > Choose Admin Menu
Default Password on C301/C321/C331/C511/C531 DN's is "aaaaaa"*
OK > Network > OK > Factory Defaults > OK > Execute > OK
That resets all the NVRAM settings to factory defaults
*If the default password has been changed you'll need OKI to generate one based on the Serial#
If you've already got that far was there something else you wanted to change?
With it enabled Network should appear in the main menu list (after PCL Emulations and ahead of Memory and Maintenance)
This should be in the User Manual - I'm on my phone at the moment if you need a link to the manual on the OKI site I can grab you a link when I get home but I'm guessing you already have one. IIRC the only NVRAM settings under Maintenance menu are for the menus.

A printer is a peripheral which makes a persistent human readable representation of graphics or text on paper or similar physical media. Traditional printers are being used more for special purposes, like printing photographs or artwork, and are no longer a must-have peripheral; 3D printing has become an area of intense interest, allowing the creation of physical objects. An image scanner is a device that optically scans images, printed text, handwriting, or an object, and converts it to a digital image. Hand-held scanners, where the device is moved by hand, have evolved from text scanning "wands" to 3D scanners used for industrial design, reverse engineering, test and measurement, orthotics, gaming and other applications.
