Foundation won't redirect my printers

Hi, Pulling out my hair...!

New Server 2012 Foundation installation,
One physical server with local OS install.

We have only four users on this network, one of which is a remote user, through RDP, over an external hardware VPN.

What happens is that the local printers will not re-direct.
I have tried on a couple of Win 7 workstations, and neither will work.

A couple of local printer resources will re-direct, namely "Fax" and "ABS PDF Driver v400".
I have the local resources selected, as shown by the other print devices re-directing.

Have tried both enabling Easy Print, and disabling, with the same results - nada.
Have installed a local printer driver with the exact same model as the printer to be re-directed.

Went as far as to install a few Terminal Services roles, even though the default Remote Admin mode is all that should be needed.

Now,
My server shown the following Remote Desktop roles installed:
Remote desktop Gateway
Remote Desktop Licensing
Remote Desktop Session Host
Still no local printers...

But I really feel like I am wasting my time,
When there must be some dumb setting I am missing...?

The main goal here is to allow the remote user (accountant) to print from QuickBooks.
We had a decent work-around by having her print to the embedded QuickBooks PDF driver, then copy it over the re-directed local drive.
But,
This won't work with check printing, as you can't print checks to PDF within QuickBooks.

I have this very same local printer (HP Laser 3200 plain vanilla easy peasy) re-directing already to a couple of Server 2008R2 servers just fine.

So if anyone has some magic to share with me I would greatly appreciate it.
Creating another VM/server or an $800 Thinprint deployment isn't in the cards as this is a very small business.
