Maybe consider your own yum repository first?
Scriptable CentOS installer is called anaconda and it takes kickstart scenario to install system.

Make a clean install, take anaconda-ks.cfg
Customize to your liking:

You need to define rpm bundles etc

(I promise it is not easy)

Please read through chapter 32 in RHEL installation guide. It guides you through kickstart install from the beginning to the end.
