Itunes iPhone 5s big issue with synce, lost notes.

I backed up my phone last night. About two weeks ago I had to reinstall Outlook so it was a fresh copy. When my phone synced I lost all of my notes except for a few that were recently added.

I have a lot of very important notes to me and I have no idea why it screwed up the data on my phone, the settings are the same as always and every time I previously synced my phone it updated the notes in outlook not wipe out what was on my phone.

The other problem is when I look at the available backups the one yesterday is the only one that showed in the list so I can't restore and get the notes and then restore last nights backup.

Does anyone have any advice on how I can get my notes back? How can something like this happen, when I plugged my phone in it auto synced just like always and nothing has changed. I don't know why it would delete most of my notes on my phone. This is so frustrating.

PS. All of my calendar appointments were also destroyed. I don't understand what caused this to happen. The only thing different is I reinstalled Outlook on my PC. I don't understand why the backup last night is the only one, it has been a month or two since backing up but why is there only one backup.

Do you have any backups of your PC's hard drive that would have older backups of the phone?
Is it possible that you have older backups stored on iCloud rather than on your PC?

Unfortunately I don't backup that part of my HDD. I don't have iCloud setup.
When you reinstalled Outlook, did it create a new .pst file (Outlook's own data file) and, if so, is the old .pst file still around somewhere (or perhaps backed up, if it is on the part of the HDD you backed up?)   If you can find an old version of the .pst file, it should contain your Outlook data (including notes) as of the time the old .pst file was saved.
