I have a customer with Windows 8.  The computer updated to Win 8.1 and it now won't recognize the 2nd monitor - the computer thinks there is only one monitor in the Display menu.

Any suggestions?

I would bet is the pc's vga drivers. Try to perform a windows update or download updated graphics card drivers for windows 8.1

    Hope it helps

I visited the client in person.  He was using a USB/VGA adapter for the 2nd monitor.  I identified the mfr & model and downloaded an updated driver from them.

Everyone, thank you for your suggestions!
