SBS2011 Restore

Hi,
 
 I have SBS2011 where Exchange Server Active Sync fails and I can't fix the problem.
 It sends and receives email just fine except:
 (1) it fails to run Exchange Management Shell
 (2) Active Sync as far as synching email/contact/calendar on smartphone fails
 (3) can't run https://remote.domain.com/remote or /owa.

 I spent a lot of time on this board to fix the problem, but to no avail.
 So I am thinking about restoring OS to the date when all was working fine.
 I have been doing Windows Server Backup every day and like to know if I can restore the system (by picking the right date when all was working fine) without restoring exchange data or user document & files.

How long have you been having the issues? Several weeks now
Have any changes been made to the server recently?  
(1) I  created a DNS forward lookup zone in SBS2011 to access my website that was running on separate W2003/IIS server on the same network. The reason to create the zone was because I could not bring up my website from internal network. After creating a zone, it worked. I was able to bring up www.mywebsite.com from any computer within the network.
(2) A few days after that, I decided to move my website to ISP because SEO would not work when I was hosting my website internally. After I confirmed that mywebsite was up and running on ISP web server, I deleted forward lookup zone that I have created and that is about the time RWW/OWA along with active sync with smartphones failed to work, I think.
I posted a few questions on EE board, but did not receive any suggestions that led to resolution of the problem.

So I am at a point, either to re-install SBS2011 from the scratch or restore just "system status" (if it is possible). I guess I can restore Exchange too if it has to be that way. I only have a few mailboxes and I can create PSTs. I just want to avoid creating SBS2011 from the scratch if I could.
