Exchange server 2010 backup and log file

Exchange Log- what type of information get stored in Logs . will it possible to purge every day . what is the production level practice for exchange log   management
I am in the process of having best combination  of exchange servr backup

1.Daily - mail box level backup
2.Sunday - Mail store (db) backup

we are running our exchange box on the VM level . we are getting daily VM image backup of exchange server.

I hope above combination will work for one mail box to entire mail box recovery scenarios    1 and 2
VM level backup will help us to rebuild the server level issues or patch update testing etc

VM snapshot is not recommended for Exchange, so better stop it, you just need to take Exchange DB backup.  Question about logs? Read this http://whatis.techtarget.com/definition/Exchange-transaction-log

Backing up db and logs are important. You can do incremental during weekdays and full during weekends.

we are getting the VM snapshot for server recovery idea in mind . what was the reason that exchange will not work with the snapshot ? we are getting mail box level backup every days and I hope bit hard to go with the DB and logos every day . is it possible to do the mail box level or items levels recovery from the DB backup ? our mail product is HP data projector 6.2

please let me know the main purpose of the  Log  And what is the best way to manually remove that logs
we used to do that dismounting the edb and deleting . I hope we have something in the exchange level to set on the mail box level and wipe . please share any idea on this
