Using 3 monitors.

Is it possible or practical to use 3 monitors with an Intel DH61BF motherboard, 3.0Ghz processor, 8gb RAM, 120 Gb SSD, Win 7? I know I can do 2 monitors

Yes, but you will need to get female DVI splitter to connect two monitor to the DVI port and you can use the VGA port as well.

You need to take into consederation that the DVI and VGA ports operate on different frequency.

The alternative is to get is to install another DVI graphic card, this will even give you extra monitor

That board supports only 2 displays. You can extend that capability with either adding a PCIe Video Card or USB to Video  adapter. The latter would not require you to remove the case cover and can be easier to install but both would require elevated access to the system if administered within a company environment to install drivers.
