what function of gobal catalog in DC? how many gobal catalog should I have at different sites?

A global catalog contains every object in the directory (in the entire forest).  It only contains a subset of attributes for objects that are not in in its domain. You will hear the term "Partial Attribute Set"

Unless you have poor bandwidth make every DC a GC more on that here

In a single domain the GC doesn't do anything as there are only objects in that domain.

MS best practice is in single domain single forest make every DC a GC as well. This has been since the beginning.

indeed, my recommendation is also to make every dc as GC as it will not add any overhead rather help smoothen authentication process.
I have also seen many applications depending on ldap authentication looks for a nearest GC, in such scenarios, it will always help you.
