We have dell server (Dell Poweredge T110, i3) and would like to put connect 4 to 8 LCDs. Any ideas which graphic card should be purchased? We are using for software development not playing game or stock market.

Dell servers do not support video cards, so finding one that will work will be an exercise in trial and error, given the low power and resources available in the T110. Finding one with the capabilities you describe will not be easy, if possible at all.
Servers are usually hidden away in server rooms, and no one works directly on the server itself, except maybe to to start the installation of the OS, or to add new disks, RAM and perform other hardware maintenance tasks.
For normal usage and configuration, setup etc, you would usually do that via a PC connected to it vial the LAN, if it is a Windows server you would use remote desktop for that, and then you can connect as many displays as you want to the PC connected to the server (provided it has the graphical power needed).
