MIgrating Local Exchange Emails to Office 365

Hello.  I am in charge of assisting the teaching staff in a small catholic school.  We are beginning to use 365 for this school year and I need to know how to either:
1) completely bypass the local exchange server but keep the same email addresses, or
2) forward emails to the staff member's 365 account.

We can do it Remote move request. If environment could be hybrid, otherwise you can archiving as PST file, then we can add the Office 365 mailboxes in the client mode. Thanks.
