Is there anyway from within exchange 2010 to get a list of (and copies of the actual email) of all emails sent by a certian user on a certain date?

Is there anyway to determine if message tracking is enabled?
Message tracking is a tool, try, by default you can see message tracking, no need to enable.

By default is is tracking everything, i.e. all mail sent, or can you filter it for certain users only. Dont currentl have access to an exchange 2010 server to check this
You can filter, try it, you can filter sender, recipient, date and time range etc etc. Open Exchange Management Console, NOT Power Shell and on the bottom you Will have Toolbox. Click on Toolbox and then you Will see section "Mail Flow Tools". Here you have Message Tracking.
