How many vCPUs do I need for small vCenter Appliance 5.5

Hi, I'm looking to install VMware vCenter appliance on a host.  It's a small setup with 3 Hosts that would be controlled by vCenter and only a few Vms.

THe default is for the appliance to have 2 vCPUs,  Will it be much affected if I change it to one?

Yes, performance will be poor, but change it and test, and see how you find the response to the vSphere Web Client.

The appliance is quite a heavy appliance, as it also has an inbuilt database.

So poor performance even with that number of hosts?

To test, can I just power off, change vCPU count and reboot?

Yes, you can test that way, and see if it's acceptable,

Hosts generate alot of data which is stored in the database, and the VMs do as well.
