Performance Monitor process counter

I'm trying to use Performance Monitor on a Windows Server 2008 R2 box... I'm semi-familiar with creating Data Collector Sets and monitoring in real time and creating logs. I would like to know if there is a way to monitor the following:

1.) # of total processes running on the server

2.) # of instances for a particular process running on the server(i.e. how many instances of powershell are running)

I need this data tracked over a week or so, so using task manager or Get-Process is not really an option for long-term logging. For the # of instances question, it seems when you open multiple instances of the same process(i.e. powershell), Windows labels them as 'powershell' 'powershell#1', 'powershell#2', etc... so I'm not sure how to count them.
