I used to run aol in Safari. I liked that I could choose date or from [which alphabetized the froms in the in box]. How do I do this in gmail?

Unfortunately, Google's gmail expects you to do search.  You can't do what you want with tabs or buttons in the web interface.  Your alternative is to use a mail client, such as Apple Mail, Outlook, or Thunderbird and connect to google's IMAP ports.  It's what I do.

Everything is a search to Google.  When your only tool is a hammer, everything looks like a nail.
