Deleted unread emails

I just received an odd request and I"m not sure if this is even possible.  We are running Exchange 2010.

We have a request to see if there is count of the number of unread emails that get deleted by a user.  There is a user we have that is not fulfilling requests coming in via email and are being deleting.  They are looking to see how many of these deleted items are unread.

I've never really heard of this sort of feature or if it's even a metric that's in Exchange.

Not sure if there's a count for what you're being tasked to do. If it is possible, can the request come in with read-receipt enabled? That way there is some accountability.
