Hi Simon.

You can ask the user to export the contacts in Mac viz vCard and then import the vCard file in the Outlook application.
Steps:
1. Open Address Book application in Mac and select the contacts that you want to export (can select multiple contacts by holding down the Command key and clicking on the contact entries)
2. Use File > Export > Export vCard and save the file to selected location.
3. Open the Outlook application and choose File > Open > Import > Import a VCARD file (.vcf) and select the saved vCard file previously.

Hope this will help.

Regards
