Excel 2010, 10mb file takes on average 57 seconds to open.....not just across the network, but also on the workstation that hosts the shared directory - seems like something isn't right correct?

I can give you some insight on common reasons for this, most probable ones first:
-anti virus software inspects too thoroughly or is buggy
-office is buggy and no patches are installed for office/windows ->install sp3 for office and all further updates. For windows, make sure to be on 8.1 update 1 if possible.
-file is somehow weird - try another excel file of a similar size. Also try your problem file on a clean windows with another excel version if possible or try open office' excel.

All Excel files take an unusually long time to open up - even on the machine that they are stored on....general file open time is about a minute.

The file is 10mb, so I just chalked it up to files that size taking that long....other similarly sized files took the same time to open

You should not have given up. 57s for 10 MB is too much.
