Saving documents while on VPN

I have one user for whom documents are redirected to \\server\redirected documents\username\...

When he is on his laptop at home and connects to the VPN and saves a document it never appears in his "Documents" folder.  I have found multiple docs in the local drive \user\roaming\Microsoft\office\recent.  He has a desktop at the office.  The laptop is strictly for remote use.  Office default it for the redirected location.  Why is this happening?  And how do I fix?

If he is connected to the vpn then should they not be saving to the network location and NOT his local machine?

Sorry for the abandoned question.... Jon is no longer working for this company and I have taken over the account.  I fixed this issue by setting the right DACL's on the remote servers share, recreated the GPO and pushed to the group the user was in, and the big kicker in killing the whole thing is the last IT person didn't turn off ActiveSync on a GPO controlled My Documents folder .... that had over 2.4 GB of data to Sync. and roughly a Gig on the desktop.

It's working great now.
