Going crazy with copy and paste on iOS 8.x

Ever since I upgraded to iOS 8, I am unable to copy and paste. If I copy something and try to paste it in a different app, it seems to always paste the second last thing I copied and not the last thing I copied.

For example

I copied this sentence:
SAMPLE SENTENCE TO DEMONSTRATE

Then the next day I try to copy and paste the following:
ANOTHER SAMPLE SENTENCE

However, when I paste it, I get the following:

SAMPLE SENTENCE TO DEMONSTRATE

I have tried different apps, different browsers, re starting the phone. All to no available. I also installed the most recent version of iOS 8.x

It seems that Install or upgrade of iOS8 are 2 different things.
Copy / Past don't give any error on new installations so try:

Back up device + Factory reset + Restore

after that Copy / Paste should be working again.
