Diagramming an Application for Work

There is no development in my organization and there is no programmers.  We are still trying to diagram the systems setup for our org while focusing on applications... ie... diagram for email, diagram for sql apps....   does anyone have any advice for this....

The purpose is for network admins who are not familiar with the app set up to have the ability to come in and see how the application works.  I am familiar with visio and other diagramming applications.  I am more interested the usefulness and best technique of what information to diagram.

Hey David-
Let me change the question up some.... if you were tasked to document all applications in an it business, how would you tackle it.... or just point me to an article....

something that lists databases, apps, that sorta thing

Good luck.. I'd probably start with the Microsoft Assessment and Planning Toolkit and try and get a baseline on what software and hardware you have.. Spiceworks (http://www.spiceworks.com) can help you . But finding out that XXX employee uses YYY widget to assist in using ZZZ program (you know about ZZZ) is something you'd never find out
