Usually folders in document library are in either ascending order or descending order . Can we set folders in our own order instead of ascending or descending order in Sharepoint 2013?  If yes then

The folders have to be sorted by something. By default they only have a Name property and that's it. So you have the option to sort ascending or descending on name only.

If you were using Document Sets instead of Folders you could add extra properties to sort by any way you wanted.

Can we have any hidden field or name on the folders to sort it?

You only have the built in fields. I should have course mentioned ID, Created Date, Modified Date etc.

If you need to you can sort them in creation order via the Created Date timestamp or maybe even Version number (the version number increments when you change the folder names).

There's no option to add extra fields to Folders. If you need this then look into Document Sets.
