Things to backup:

A good thing is to folowup the Disaster recovery plan.
Verify your backups there is nothing more frustrating than a corrupt backup.

The most important thing to do is an Offline backup and by this way do a purge of the transaction logs
I've always used Symantec Backup exec  and Acronis
