Developing music app for iPhone/iPad

I have programming experience but totally new to mobile app development.

How would I go about learning how to create apps like AnytunePro+, Synthesia, SingHarmonies (a 4-part audio track app where you can mute and solo parts). For iPhone/iPad initially (and also Android later)

I would start here and get the iOS SDK and Xcode IDE.
