moving from pst file to Hosted Exchange

We currently use pop3 email from a third party hosting company with Outlook. We are moving to Hosted Exchange and I wanted to know if we will lose any features we have currently with our pop3 email?  I'm being told Hosted Exchange will be a much better email solution.

You will not lose anything.
POP3 is the most basic email solution that you will get.
Import the PST file in to your hosted Exchange platform then it is available on any client that you use - OWA, ActiveSync or any number of Outlook installations.

Will my email sync automatically between iphone and the Exchange mailbox, i.e. if I delete an email on my iphone will it be deleted in my Exchange mailbox or do I need to run a sync?

It can do, if you configure it to do so.
Deletions don't always happen immediately, they are usually a background task done a few minutes later.
