The profiles folder stores the roaming profiles of the users. e.g. desktop background, icons, files in users appdata roaming tree. Thus users get the same environment on all clients they log in (this pcs need to be domain members).

The home directory is just for saving personal files on the server, so you have access to them from all machines that can access the server, even they are not joined in the domain.
