I've recently installed and configuered mailsend on my dedicated linux server. And when I am trying to send away a test email the email adress automatically becomes root@email.minecraftcommunity.org and I wonder where I can change the default email.

Locate and edit main.cf - should be in /etc/postfix
Add to the end of the file

smtp_generic_maps = hash:/etc/postfix/generic

...and save.

Open
/etc/postfix/generic

...and add on the end

root@email.minecraftcommunity.org  you@youremail.com

What does it mean to be "Always On"?

Is your cloud always on? With an Always On cloud you won't have to worry about downtime for maintenance or software application code updates, ensuring that your bottom line isn't affected.

Don't know why you would want to use the ancient sendmail especially as you are just setting up mail on the server.
Postfix (with Dovecot if needed) is the common MTA to use on Linux these days.

I will see if I can find anything on the setting, but their config files are near impossible to read.
