In my organization, we have a shared calendar. If there is an entry in the calendar for a meeting, is there a way to see who put the entry in there and when?

The answer to both is yes.  You can see who added the item to the calendar by looking at the Organizer property.  To see when the item was added to the calendar, look at the Created property.  Both properties are available if you switch to a list view.
