Show field codes instead of their values

Occasionally Word will change the setting 'Show field codes instead of their values' to yes.

Usually prompts users to give me a call.
Most unaware they can toggle the setting..

I have repeatedly tried to educate users but as it happens so infrequent they tend to forget the steps.

Why does word do this, is there a way of configuring a document to have this setting unchecked by default?

There is only one step to setting it back again (Alt+F9). However it is just as easy accidentally to use the same toggle to show the codes - which would explain why it happens.
