Here is a snippet of the navigation for a project I am working on.

windows +
doors +
fireplaces+

I would like it to work so that when you click on Windows button that its subcategories appear and the other buttons get pushed down kinda like this:

Windows
      Bows/Bays
      Garden
      Double Hung
      Sliders
      Casements
      Insulator
      Glass/Grids/Colors
Doors+
Fireplaces+

Is that possible?

It's very possible, and the easiest way to accomplish it is probably with a plugin. I would recommend the "Responsive Menu" plugin which will give you a ton of options including a responsive accordion menu like you described.

If you would like something different, there's lots of options at your disposal here.
