What is the best option to keep receiving email if exchange server goes down. I have 6 users setup on exchange server but if the server goes down I wont be able to receive email. What is the best option for me to keep receiving email even if server goes down. I was even thinking of switching to Gmail and stop using exchange all together as it seems a bit of an over kill for just 6 users. My main concern is having email at all times.

Exchange for 6 users is an overkill as you have to management anti-virus and anti-spam also.  One option would be to get rid of Exchange and use some other services such as Office365 if these users communicate and share calendars, etc., go with something like GMail if there no collaboration/calendar sharing or your last option would be to outsource to someone like FuseMail, etc.
