How to go about mounting VHDX Files that have snapshots

How do I go about opening the latest snapshot from a vhdx file that has multiple snapshots?

Is it just as simple as mounting the last file?

You just have to merge before mounting. There is no other way.

Deleting snapshots in hyper-V manager will merge the differencing disk back into the main disk file. But you obviously lose the ability to revert back to that snapshot. That's the trade-off. So have a backup.

These are from a decommissioned machine.

Do I need to add these all back into hyper-v?

You'll need the VM files, not just the vhd files. And you'll need to import the VM. Otherwise it won't know about the snapshots.
