Roaming Profile setup

I have two questions. Looking to setup roaming profiles however some of these people have large profiles. Is it possible to excluded certain folders or is that just the nature of roaming profiles.

Second question is if you can't exclude certain folders, after the profile is created does it always sync the data back and forth even if nothing has changed?

You cannot exclude profile folders but you can re-direct them to another location. You can do this using Group Policy Folder Redirection.
