Exchange doesn't use SQL, so I'm not sure what is prompting that portion of your question.  You can upgrade SQL server to whatever version you want. SBS doesn't really care, as its native SBS components will continue to run the version that they are installed as. In other words, it's a parallel install, not an upgrade.  When you go to do the install it will just install SQL 2008 in parallel, and leave SQL 2005 running also.

Just don't try to UNINSTALL SQL 2005, as that will cause the SBS components that use SQL to stop working.
