Your own gateway will calculate that for you. First configure the IOS and at some point during the config it will tell you how many conference sessions you can get:

Router2(config)#voice-card 0
Router2(config-voicecard)#dsp services dspfarm

Router2(config)#dspfarm profile 1 conference
Router2(config-dspfarm-profile)#codec g711ulaw
Router2(config-dspfarm-profile)#codec g711alaw
Router2(config-dspfarm-profile)#codec g729ar8

Router2(config-dspfarm-profile)#maximum sessions ?

by using the '?' mark the router will return how many sessions it can support. Each session with up to 8 conference participants.
