I have a veeambackup v8 to keep 7 retention copy, but I realized that it doesn't keep 7 copy only (see bottom screenshot), any idea how to fix that ?

Are you modifying the settings for an incremental backup job? If so it looks like the retention policy is working perfectly fine as I can see seven Veeam incremental files in your second screenshot. Look closely and you'll see that some of those files have a green arrow overlay on the icon which indicates that they are incremental files.

The other three files are two full backup images (the files that are 600GB+ in size), along with a backup chain metadata file which is the first file in your screenshot that has a size of 35KB.
