I would strongly suggest you to go through EE expert Andrew's articles on P2V, which deals with VMware vCenter Converter Standalone.

YES, you can P2V while the server is online!

Hi,

A pure Microsoft method is to use disk2vhd which is a tiny, portable tool you can run direct from USB. It is very, very easy to use and will also capture a machine in under an hour if the volumes are not too big.

It will create a VHD file which you can simply attach in Hyper-V as "existing VHD" when you create a new virtual machine.

I have used both the vmware tool and this, but prefer this for it's simplicity and not tying you to a 3rd party vendor. You can use a free tool to capture a machine and host it on the free Hyper-V server.

That is just my taste of course :).
