How do I get all of my web controls to data bind on post back?

Easiest way would be to put everything in an updatepanel and use ajax so the page doesn't refresh.  

Not all controls can be databound, but you could also do something like:

  if (!Page.IsPostBack)
     // first load
    //runs every time there is a postback.  Be careful as this is run FIRST.  So if the user updates a control, and clicks submit . . . then you set a textbox back to the DB value here, you'll never see the change.
