UE-V & Microsoft Outlook Exchange Sync

How would UE-V behave in the following scenario;

Currently using roaming profiles but about to change to UE-V. A common problem we have is Outlook will just freak out sometimes because of the profile and the end user has to re-sync their entire mailbox from the hosted Exchange (this takes ages as these mailboxes are massive). If we deployed UE-V would Outlook retain the messages already sync'ed so the end user would only have to sync the new messages they've received? If it doesn't could we just redirect the AppData folder so the OST is on a network share?

Any tips?

"The solutions and answers provided on Experts Exchange have been extremely helpful to me over the last few years. I wear a lot of hats - Developer, Database Administrator, Help Desk, etc., so I know a lot of things but not a lot about one thing. Experts Exchange gives me answers from people who do know a lot about one thing, in a easy to use platform." -Todd S.

UE-V does put the data on a network share and works fine with outlook/exchange
