You might be able to use SNMP with MRTG for free to create a graph for this stuff... but I generally agree with Cliff on this - Performance Monitor.  It's been there since NT4 days.  Simply type PERFMON from the command line and it starts.  You might want to google PerfMon Tutorial to learn about everything it can do.

One thing to note, performance monitor logging uses CPU, RAM and disk resource. You can't do anything about the first two but you can store the logs on a USB stick to avoid adding to the disk I/O.
