Works fine here...

md "%DestFolder%\Hiking Photos"
...results in: %DestFolder%\Hiking Photos

md %DestFolder%\Hiking Photos
...results in: %DestFolder%\Hiking

It shouldn't as long as youy have the " " around the whole path what is in the variable %destfolder%

i.e. does it have " " in the variable already for instance, though shouldn't make a difference either, i.e.

md "c:\somedir\Hiking & Photos"
md ""c:\somedir"\Hiking & Photos"
etc.

Without the " " then & is for adding another command on the same line, e.g.

cls & dir *.txt & echo something
