yum update php (which version of centos)? 5,6? Are you also looking to update the centos version if possible?

Centos is built to maintain the versions of essential items to maintain application continuity without fear that there will be as there often are conflicts, deprecated mechanisms introduced with the new version.

To transition in versions, you either have to install it yourself through finding an RPM of the version you want and installing it or getting the source and compiling it yourself.  In either case you will have to maintain the vulnerabilities if any and patching of this version.

you have not said which centos version you have nor whether you need a newer version of PHP.

That is not how centos works.  It provides a version 5.4 or 5.5 and that is the only version they update/patch.

Look at centos upgrade to 7 (make sure it has the version you are looking for)

The only option to maintain centos 6 and only upgrade php to a newer version would be for you to download the source of the version you want:
http://php.net/downloads.php
Make sure the requirements within readme/install etc are reviewed and all the options you want and need in the form of external (mysql, etc. are of the minimum version .......)
compile, and install.

You should test it firth.

Many things that are included in newer versions require a bit of ...... to perform in the existing.

There must have been a reason you/your organization selected centos for the platform versus others that would likely have updated your entire system, kernel, php, mysql, apache, etc. to the newest available versions.

when i update our current version of php 5.3.25...

this was obviously done manually since the CentOS 6.6 repository has version 5.3.3-38 so you'll have to upgrade manually
trying to use yum will not work since it won't be aware of the manually installed version

Missed the first line.

If you've already taken steps to maintain a version of php on your on,
you have to maintain the source.  Then whether you want to update the security issues or other vulnerability corrections, you have to use the copy of the source, to make the suggested changes to the source. compile it test and install.

Not sure how you expect anyone outside your organization to provide full details on what to do given only people within your organization know how your system is setup/what features/functionality you are looking for and need, and how they interact.
