Exporting VMs from standalone ESXi Host to external storage to be imported into remote esxi host and configure veeam replication between the 2x hosts/VMs?

As above.  Whats the best way to do this?

later when you have restore, or Imported the VM at the destination, you will want to "map it" as per this Veeam Article

could i not use veeam backup file, copy that across and build a temp veeam server to restore it?

Yes, if you wanted to, but it would take you longer.
